| CHICKEN WITH EGGPLANT
RAGOUT
5 tbs
extra virgin olive oil
8 large chicken pieces sea salt 4 shallots, peeled and roughly chopped 4 garlic cloves, smashed 2 medium eggplant trimmed and chopped handful of thyme sprigs handful of rosemary sprigs 4 zucchini trimmed and chopped glass of dry white wine 8 plum tomatoes, peeled, seeded and chopped or 14 oz canned chopped tomato Heat oven 375. Heat a large heavy skillet and add 3 tbs olive oil. Season the chicken breasts with salt and pepper. Sear the chicken in batches and cook skin side down 3-4 minutes until golden brown, then turn over and cook for another 3-4 or until juices run clear. Transfer to plate. Add remaining oil to skillet and add shallots, garlic, eggplants and few thyme and rosemary sprigs. Cook for 5 minutes until onions are soft and translucent. Add eggplant and season with salt and pepper. Add zucchini pour in wine and simmer until reduce by half. Stir in tomatoes and pour into a hot roasting pan. Place seared chicken on top and scatter with herbs. THANKS CHEF RAMSEY! | ||||||
