The Whole is Worth More Than the Sum of Its Parts!
Greetings!
How are you nourishing yourself? As a health counselor I help my clients find ways to nourish themselves - we don't only focus on nutrition. In that way, they can feel good from the inside out. Sometimes when we focus so intently on the benefits of a specific nutrient - we lose the beauty of where it came from - and the team it has surrounding it to help it work in your body. And the taste, the scent, the texture, the color and the excitement of the people we are sharing our meal with. It seems that we have lost the beauty of the forest while looking at the trees.

We tend to focus on the benefits of an individual vitamin or mineral and separate it out. This would be equivalent to looking at the human body, and noticing that legs make you move - without them you could not walk. It would be like taking a supplement of legs if you wanted to walk - and forgetting that the brain, the muscles, the arteries, the nervous system etc. are all involved (you get the point) in helping those legs to walk. And moreover, you lose the beauty of the whole person, focusing only on the fact that legs make that person walk: Where are they walking to? Why? The beautiful way they shuffle or stroll about! Those legs tell a story.

In my recent study with Paul Pitchford, "Healing With Whole Foods", I learned that it takes 1500 mgs of isolated Vitamin C to equal an effective dose of 5.7 mgs of Vitamin C from Whole Foods (International Journal of Science, Nature). Interesting isn't it , and yet so many are unaware of this fact. So you can eat a fruit or vegetable and get so much more than a white tablet.

So this is why it is important to learn how to eat and NOT how to to diet. The importance of a balanced plate tells us that the whole is so much more than the sum of its parts!

Looking at food as nourishment and not fearing food is key to forming a healthy relationship with your cuisine! If you're an athlete you'll want to learn how to create the energy you need to better your performance! Want to improve those grades? You will also learn how food can help you think more clearly, keep your focus and achieve the grades you never thought possible. Want to build a healthier body - do it with quality food choices! Whatever your goal, you won't want to miss this fun-filled series. Each month includes healthy breakfast or lunch ideas, healthy after school and evening snack ideas and more.

RECIPE OF THE MONTH
  CHICKEN WITH EGGPLANT RAGOUT
5 tbs extra virgin olive oil
8 large chicken pieces
sea salt
4 shallots, peeled and roughly chopped
4 garlic cloves, smashed
2 medium eggplant trimmed and chopped
handful of thyme sprigs
handful of rosemary sprigs
4 zucchini trimmed and chopped
glass of dry white wine
8 plum tomatoes, peeled, seeded and chopped or 14 oz canned chopped tomato
Heat oven 375. Heat a large heavy skillet and add 3 tbs olive oil. Season the chicken breasts with salt and pepper. Sear the chicken in batches and cook skin side down 3-4 minutes until golden brown, then turn over and cook for another 3-4 or until juices run clear. Transfer to plate. Add remaining oil to skillet and add shallots, garlic, eggplants and few thyme and rosemary sprigs. Cook for 5 minutes until onions are soft and translucent. Add eggplant and season with salt and pepper. Add zucchini pour in wine and simmer until reduce by half. Stir in tomatoes and pour into a hot roasting pan. Place seared chicken on top and scatter with herbs.
