What is Inflammation?
Greetings!
We hear alot about inflammation today regarding ill-health. But what is inflammation? Inflammation is a protective attempt by the body to remove injurious stimuli as well as initiate the healing process for the tissue.
This doesn't sound like a bad thing...it actually sounds like a good thing. The problem is, many times our body is bombarded by injurious stimuli day after day which sends out our immune response into overdrive.
What is the injurious stimuli? It can be anything our body doesn't recognize. This could come in many forms:

1. Genetically modified foods.
2. Additives, preservatives, colorings
3. Chemicalized ingredients
4. Chemicalized fertilizers
5. Eating TOO much at one sitting.
6. Stress hormones released for long periods of time.
7. Eating too many animal products such as red meat, dairy and eggs.
8. Artificial fats such as margarine, hydrogenated and partially hydrogenated fats and oils - rancid fats and oils found in many baked goods such as muffins, cookies, protein bars, breakfast bars, etc.
9. Refined food products such as white flour, white sugar, high fructose corn syrup, artificial sweeteners, refined sweeteners, etc.
10. Too many toxic stimuli which may come in the form of relationships, career choices and negative thought patterns etc.
What are some inflammatory diseases?

Heart Disease
Arthritis
Cancer
Diabetes

To help the body heal, it is a good idea to rid yourself of inflammatory stimuli. The above foods and lifestyle choices move the body into an acid ph and out of its natural balance which triggers the inflammatory process.
What foods and lifestyle choices can ease inflammation? I bet you can guess! Fresh fruits and vegetables:

Dark leafy greens like kale, spinach and chard
Broccoli
Sweet potatoes
Carrots
Apples
Cherries
Blueberries
Grapes

Hempseed butter
Flaxseeds
Pumpkin seeds
Walnuts

Looking at food as nourishment and not fearing food is key to forming a healthy relationship with your cuisine! If you're an athlete you'll want to learn how to create the energy you need to better your performance! Want to improve those grades? You will also learn how food can help you think more clearly, keep your focus and achieve the grades you never thought possible. Want to build a healthier body - do it with quality food choices! Whatever your goal, you won't want to miss this fun-filled series.
This month we will enjoy preparing dinner selections and as always a wonderful dessert.

RECIPE OF THE MONTH
  SAUTEED SCALLOPS WITH CORN SALSA scallop salad

(From Chef Ramsey's Fast Food)
Serves 4
12 scallops, shelled and cleaned
½ tsp medium curry powder
2 tbs. extra virgin olive oil
small handful of arugula leaves
For Salsa:
2 fresh corn cobs - or- 1 10 oz frozen organic corn
2 scallions
3 tbs sesame oil
7 oz. cherry tomatoes, quartered
handful of cilantro
1 red chile, seeded and minced roughly chopped
1 red onion, peeled and minced
juice of 2 limes
sea salt and black pepper

(Warm all salsa ingredients in a pan for 2 minutes) Halve the scallops horizontally into 2 disks. Mix the curry powder with 1 tsp sea salt and sprinkle over the scallops. Use George Forman Grill, BBQ - or - heat a large skillet over high heat and add the olive oil and Panfry the scallops for 1 minute on each side. Place arugula on plate, top with corn salsa and top with scallops. Scatter scallions.
